Choosing the correct temperature sensor involves balancing accuracy, range, response time, packaging, and interface. For student use, NTC thermistors and digital ICs offer affordability and easy circuit integration. Industry users prefer RTDs or thermocouples for ruggedness and wider range.
Suppose you're designing a temperature probe for a water tank. An NTC thermistor with 10kOhm resistance at 25 degreesC is chosen. Using the Steinhart-Hart equation (datasheets provide constants):

This allows you to translate measured resistance into temperature via your circuit or microcontroller. Many students use the popular DS18B20 digital IC and connect directly to Arduino and Raspberry Pi boards, using libraries to read temperature values in Celsius.
