R (heat sink) = (Tj(max) - Tambient) / Pdissipated - R (junction-case) - R (case-sink)
If Tj(max) = 125 degreesC, Tambient = 60 degreesC, Pdissipated = 5W, and MOSFET R(j-c) = 2 degreesC/W, interface pad R(c-s) = 1 degreesC/W:
So, select a heat sink rated at 10 degreesC/W or better (lower) at zero airflow. If space allows active cooling, an attached 12V fan can further improve performance.
